What you do
1. Prepare the vegetables.
2. Grate the cheese.
3. Beat the eggs in a large bowl with a fork.
4. Add 2.5ml sunflower oil to a small frying pan and the eggs.
5. Stir continuously until softly scrambled. Add the vegetables and the cheese (if using) and cook for 30 seconds. Spoon onto toasted wholemeal muffins or toast and serve immediately.
