What you need
Ingredients
- 4 medium carrots
- 1 small head of broccoli
- 1 medium cucumber
- 1 pepper (yellow, orange or red)
- 6 ripe tomatoes, seeded and diced
- 1 clove of garlic, peeled and crushed
- 1 small onion, peeled and chopped finely
- ¼ fresh green chilli,
de-seeded and chopped finely

What you do
- Wash the carrots, remove the top and tail, and peel them. Cut them into long strips and put into the medium mixing bowl.
- Cut off the woody end of the broccoli stalk. Break the head into bite-size florets and wash them. Add the florets to the medium mixing bowl.
- Cut open the pepper and remove the stalk and seeds. Wash the pepper and cut into long strips. Add to the medium mixing bowl.
- Wash the cucumber, remove the top and tail, and cut into long strips. Add to the medium mixing bowl.
- To make the salsa, mix the tomatoes, garlic, onion and chilli together in the small bowl. Leave for 30 minutes at room temperature to allow the flavours to develop.
- Serve the vegetable crudités (carrot, broccoli, cucumber and pepper) on a serving dish, with small pot/s of salsa alongside.
Something else to try
For extra flavour, add 15ml spoon fresh coriander, finely chopped, to the salsa mixture.
You could also serve the vegetable crudités with houmus, or cottage or cream cheese.
