What you need

For the naan bread


What you do

  1. Preheat the oven to 250°C/gas mark 8. Put the baking tray in the oven.
  2. Warm the milk (either in a saucepan or microwave).
  3. Sieve the flour and baking powder into a bowl. Stir in the yeast.
  4. Add the yogurt, oil and warm milk.
  5. Mix into a soft dough and knead for 10 minutes.
  6. Leave the dough to prove (rise) for around 30–45 minutes in a warm place or until double in size. (Prepare the Rogan Josh while you wait).
  7. Knead the dough again and divide into 4.
  8. Roll out each piece of dough into a ‘teardrop’ shape (oval).
  9. Using oven gloves, remove the tray from the oven, place the naans on the tray and return to the oven for 3–4 minutes, until the naans are puffed up and brown.

Something else to try

To make them extra special, brush the naans with melted butter and sprinkle with poppy or sesame seeds before baking. Flaked almonds, dried fruit, coconut and spices could be added to the naan mix before baking.

What you do

  • Slice the onion and cut the tomatoes.
  • Heat the oil in the frying pan and add the cubed lamb. Cook for 5 minutes.
  • Add the Rogan Josh curry paste, sliced onions and garlic. Cook for a further 5 minutes.
  • Meanwhile, cook the rice in boiling water according to the instructions on the packet.
  • Add the canned and fresh tomatoes and cook for a further 5 minutes.
  • Stir in the fresh coriander and serve the Rogan Josh with the boiled rice and the naan bread (as above).

Something else to try

For a vegetarian alternative, substitute the lamb with a can of chick peas or kidney beans, or use a combination of soft vegetables (e.g. mushrooms, courgettes and peppers).
